Thai Red Curry Recipe
Serves 2
You'll Need:
- 1 tbsp oil
- 400g chicken breast, thinly sliced
- ½ jar Blue Dragon Thai Red Curry Paste
- 200ml Blue Dragon Coconut Milk
- A handful of mangetout
- 1 red pepper, sliced
- Steamed rice, to serve
Method:
1. Heat the oil in a pan and fry the chicken until sealed.
2. Reduce the heat to medium, add half a jar of curry paste and cook for 1 minute.
3. Stir in the coconut milk and bring to the boil.
4. Add the mangetout and red pepper.
5. Simmer until the chicken is cooked through.
6. Serve with steamed rice.
Top Tip: Add a dash of Blue Dragon Fish Sauce after adding the coconut milk for a richer, deeper flavour.
Vegetarian Recipe
For a vegetarian or vegan meal, replace the chicken with tofu, chickpeas or mixed vegetables such as red pepper, baby corn, mangetout and broccoli.
