Thai Green Curry Recipe
Serves 2
You'll Need:
- 1 tbsp oil
- 400g chicken breast, thinly sliced
- ½ jar Blue Dragon Thai Green Curry Paste
- 200ml Blue Dragon Coconut Milk
- A handful of mangetout
- A handful of baby corn
- Steamed rice, to serve
Method:
- Heat the oil in a pan and fry the chicken until sealed.
- Reduce the heat to medium, add half a jar of curry paste and cook for 1 minute.
- Stir in the coconut milk and bring to the boil.
- Add the mangetout and baby corn.
- Simmer until the chicken is cooked through.
- Serve with steamed rice.
Top Tip: Add a dash of Blue Dragon Fish Sauce after adding the coconut milk for a richer, deeper flavour.
Vegetarian Recipe
For a vegetarian or vegan meal, replace the chicken with tofu, chickpeas or mixed vegetables such as broccoli, peppers, mangetout and baby corn.
